"one way ashland is working to decrease negative impacts on our environment is actually happening inside restaurants." a new group called the southern oregon food solutions are working on minimizing food waste. "we waste 40% of our food in this country. the problem with wasted food is that it creates a greenhouse gas called methane and methane is 70% worse than carbon." ashland's standing stone brewing company tries not to throw anything away. "it matters to us you know ...these are all basically scraps of other things that are on our actual menu that we haven't utilized yet so we turn them into a special." they have different colored buckets for trash, recycling, soft plastics and compost.
