STIR FRY FOR ANY MEAL
(keto and low carb friendly)
Ingredients:
3 chicken breasts cut up in bite sized pieces and put in a bag to marinate for at least ½ hour with Teriyaki sauce and if you have 2 lemon grass stalks. (You can sub the meat for stew meat, shrimp, or tofu.)
4 eggs in bowl whipped with a fork
Shredded carrots about 2 cups
Angel Hair coleslaw ¾ of a bag
Sugar Snap Peas ¾ bag
Sliced mushrooms any kind about 6 regular white mushrooms
8 or more chopped green onions
4 lg radishes chopped
1 lime or lemon
2 Tbs butter or olive oil

In large frying pan turn on heat to high, add about 2 Tbs of butter and empty the chicken into the pan and stir and brown. Lower heat to med, and take out the lemon grass. Squeeze the lime into the pan and add about ¼ cup of water or any kind of broth. Keep stirring. Add the mushrooms and carrots and cook for about another 2 minutes. Add the cabbage and sugar snap peas. Stir up the heat to high, and add the eggs. Stir till the eggs are done. Pour the whole shebang into a large serving bowl and top with the radishes and scallions. Add Braggs or soy sauce to taste. You can also pour over rice or ramen noodles. This dish is great served cold too.
