MEDFORD, Ore. -- South Medford's IHOP will open in exactly one week. You'll be able to get some of the store's world famous pancakes next Tuesday morning starting at 6 a.m. The new IHOP will close at 10 p.m.
This IHOP can hold about 200 people at a time. There will also be an outdoor patio area with about 10 tables.
IHOP will be serving some new breakfast items for the fall. There's an entire menu with food and drinks themed around the Addams family. Pumpkin spice lovers can also order IHOP's seasonal pumpkin pancakes. IHOP will also be serving gluten friendly pancakes.
These pancakes are world famous, according to general manager Betse Cox. But there's another reason why people come to IHOP.
"Memories are built here," said Cox. "Customers point out that this was their first date, sitting at this table. Or this was where they were interviewing employees. Or they say I remember going to IHOP every weekend with my family. It's just a memory builder, I think."
The South Medford IHOP is also hiring more than 100 employees. Those positions include hosts, servers, cooks, dish washers and managers.
Betse Cox is the store's manager. She said she understands why people are so excited for this IHOP to open. Cox grew up in Medford. She used to manage the city's old IHOP before it was torn down in the early 2000s to make way for a highway off-ramp.
After Medford's old IHOP closed, she moved to Texas. When Cox heard about a new IHOP opening in Medford, she jumped on the chance to come back. For Cox, this store is kind of like an IHOP homecoming. She said she aims to make this IHOP feel like home to new employees, too.
"It's just a great atmosphere," said Cox. "You know, you work together long enough and it's like family. Anyone who works in the restaurant business knows you work together long enough, it's just a family."
