Sourdough Carbonnara Serves 2-3
1 Box (1/2) lb of Sherry's Pasta Sourdough Pasta
6-8 pieces of Bacon plus 3 Tbs of the bacon grease from Forage & Plow
1 cup Fresh Parmesan cheese grated
¼ cup Heavy Cream
Cut up tops of Green Garlic & Onion chopped small
2 Tbs Butter
4 eggs = 3 egg yolks & 1 whole egg
Boil water, add salt if you'd like. When water boils, add pasta and time 2-3 minutes
In small fry pan melt the butter, bacon grease, and bacon. Add the Garlic and onion tops and heat on medium heat. You only want to get it hot.
In bowl separate the 3 eggs & only add the yolks. Add the whole leftover 1 egg and whisk well. Add the cheese and whisk till blended.
Add the Heavy Cream to the saucepan and make sure it gets hot in the saucepan and stir.
Drain pasta and add to the saucepan mix well. Take off heat and empty into larger bowl. Add the eggs and toss well immediately. Add Pepper & Salt if needed.
Serve up on plate.
