Kale and Lentil Salad
Ingredients:

- 2 cups kale, julienned
- ¼ cup chopped parsley
- 2 T grated carrot
- 1 T raisins
- 2 garlic cloves, minced
- ½ lemon, juiced
- 3 T olive oil
- 3 T sunflower seeds
- Dash nutmeg
Combine kale, parsley, carrot and raisins. In a separate bowl, combine garlic and lemon juice. Whisk in olive oil. Toss dressing with mixed greens and season with salt and pepper to taste. Top with sunflower seeds and a dash of nutmeg.
