1) Pull Membrane
2) Make Rub (recipe here)
3) Rub the Rib
4) Put Smoker at 225 for 3 hours
5) Take off smoker and sprinkle brown sugar, butter and honey
6) Wrap and put back on smoker for 2 hours
7) Unwrap and glaze with BBQ sauce. Put back on smoker for 20-30 minutes.
This will tighten up the meat and allow the BBQ sauce to get sticky.
