MEDFORD, Ore. — Saturday marked the 1st anniversary of the Medford Food Co-op’s grand opening. In the first year, more than $2.6 million worth of goods moved through the Co-op.
Dozens of people joined each month since it opened, making the current total at about 1,500 members. “It’s been an incredible ride and the way the board has it projected out into the future we don’t see an ending, cause there’s a tremendous demand for really healthy food and really healthy families,” says Medford Food Co-op President Jim Sims.
Since business has exceeded expectations, the Co-op plans to add a community classroom and a deli.
