Medford, Ore. — If you’re finding some large veggies in your garden, you don’t have to throw them away. There are plenty of options including composting them.
All you need to do is place your giant veggies into a five-gallon bucket and use a flat blade shovel to chop them up. Then you simply dump them onto the compost pile. OSU Extension Master Gardeners said it’s important to use two parts brown to one part green organic matter. That means you’ll need to throw the veggies in with straw, leaves, soil and shredded brown paper bags.
