Kale and Lentil Salad

Today's 'In the Kitchen' features a healthy kale and lentil salad.

Kale and Lentil Salad


  • 2 cups kale, julienned
  • ¼ cup chopped parsley
  • 2 T grated carrot
  • 1 T raisins
  • 2 garlic cloves, minced
  • ½ lemon, juiced
  • 3 T olive oil
  • 3 T sunflower seeds
  • Dash nutmeg

Combine kale, parsley, carrot and raisins. In a separate bowl, combine garlic and lemon juice. Whisk in olive oil. Toss dressing with mixed greens and season with salt and pepper to taste. Top with sunflower seeds and a dash of nutmeg.
