MEDFORD, Ore. -- NewsWatch 12's Gio Insignares is 'In the Kitchen' with Dustin Myers from The Vine in Grants Pass for a look at a rockfish dish.
Start with rockfish filets, season them, and then place on buttered pan
You’ll want to sauté the rockfish until the seasoning sticks, then add about 1/3 cup of cream to the pan, as well as fresh chives and oregano
Meanwhile, fry or grill your polenta (cut into strips or small blocks) until it has a golden crisp look. You’ll want them to be soft on the inside while maintaining a crunch on the outside
Plate fish and polenta. Enjoy!
